I want to but a dirt cheap car (around $1000) in the Austin area, so that I can learn how to work on it. The only car that I actually get to work on is a 1929 Chevy, but I don't have regular access to it.
I am looking for a car that has:
1) A manual transmission
2) Easy to find parts for / easy for a beginner to work on.
So far I have only found an !!!error: Indecipherable SUB-paragraph formatting!!! .
What other good options are out there?

ANY running car is worth $500!

I thought E30 was the answer. I bought my first E30, a 1990 325i Convertible, for $800 a few years ago. My second one, a 1987 325is Coupe I bought for much, much more. Surely there's a running one out there for $500. As long as you/friends can work on the car to keep it running...

That is what I thought. I've raised my budget.

For a moment I thought you were looking for a $500 E30 and I actually laughed out loud.
At that price range, anything that runs.

I'll leave the search to you, but an E30 like the heap you pictured is a good option as it offer great driving characteristics after you're done wrenching for the day.

Only if you live in a place without a serious yearly inspection.

That is, most of the US, including where the OP is located. We generally don't have safety inspections over here, and the ones that do aren't all that strict.
Cars that can pass such an inspection are almost always worth $1000 minimum.

Used cars where I live are overpriced. If someone put a running car in decent shape on Craigslist for $1,000, it would be bought immediately and then quickly relisted asking $2,000.

I love car listing photos that look like the owner abandoned the car in the forest. "Runs great...trunk has some stains and scratch marks on the inner lid..."
